How to Make a Healthy Lower-Calorie Grilled Cheese Sandwich

Grilled cheese sandwiches are not renowned for being the healthiest snacks or meals. However, you can make a few substitutions to reduce the fat and replace unhealthy cholesterols with heathly cholesterols. This grilled cheese recipe has a strong, delicious flavor and a higher nutritional value.





Ingredients (for two sandwiches):
4 slices whole wheat bread
1/4 cup shredded swiss cheese
1/4 cup shredded sharp cheddar cheese
5 tsp olive oil
one dash salt
one dash black pepper
Optional: 10 to 12 fresh spinach leaves

Warm the griddle or skillet to medium low and place 2 tsp of olive oil in the pan. While the oil is heating, mix the cheeses with the dashes of salt and pepper. Place equal amounts of cheese on two slices of bread, top with spinach leaves and another slice of bread, then brush the tops of the sandwiches with the remaining olive oil.

Place the cheese sandwiches in the pan, oiled side up. Press down on the grilled cheese sandwicheswith a spatula just before you flip them and cook the other sides. The whole wheat grilled cheese will be done when both sides are lightly golden brown and the cheese is melted.

Serve these healthier grilled cheese sandwiches with vegetable stew or a salad of spring greens.
